Grain Bill
- 31.25 lb (14.17 kg) Two-row pale malt
- 21. 0 oz (595 g) Carapils malt
- 8.0 oz (227 g) Crystal 40 malt
Mash Schedule
- Heat 10.75 gallons water to 135F
- Mash in grain to:
- 127F for 10 minutes (Protein Rest); direct heat to
- 147F for 30 minutes (Saccrification Rest); direct heat to
- 155F for 10 minutes (Saccrification Rest); direct heat to
- 168F for 10 minutes (Mash out)
- Sparge with 170F water
Wort Boil and Hop Additions
- To the empty pot, add
- 2.5 oz (28 g) Pacifica hops, 10.9% alpha acid (First Wort Hop – Flavour & Bittering)
- Collect 14 gallons of wort into the pot. Bring to a boil, add
- 4.5 oz (70 g) Horizon pellet hops, 16.7% a.a. (boil for 60 min – Bittering)
- 2.0 oz (57 g) Nelson Sauvin hops, 13.1% a.a. (boil for 30 min – Flavour & Bittering)
- 2.0 oz (57 g) Summer hops, 9.3% a.a. (boil for 10 min – Flavour & Aroma)
- 2.0 oz (57 g) Pacifica hops, 12.2% a.a. (boil for 0 min – Aroma)
- 2.0 oz (57 g) Galaxy pellet hops, 13.4% a.a. (boil for 0 min – Aroma)
- 2.0 oz (57 g) Summer pellet hops, 8.8% a.a. (boil for 0 min – Aroma)
- 2.0 oz (57 g) Galaxy pellet hops, 17.6% a.a. (boil for 0 min – Aroma)
- Recirculate/whirlpool for 20 minutes
- Chill to 65F and transfer to two, 6 gallon (23L) fermentors
Fermentation
- To each fermentor, add two packages (or a appropriate yeast starter) of Wyeast 1450 Denny’s Favorite yeast
- Ferment at 65F for 10 days
- To each fermentor, add
- 1.0 oz (28 g) Motueka hops, 9.3% a.a. (Dry Hop – Aroma)
- 1.0 oz (28 g) Nelson Sauvin hops, 12.2% a.a. (Dry Hop – Aroma)
- 1.0 oz (28 g) Pacifica pellet hops, 13.4% a.a. (Dry Hop – Aroma)
- 1.0 oz (28 g) Galaxy pellet hops, 8.8% a.a. (Dry Hop – Aroma)
- 1.0 oz (28 g) Summer pellet hops, 17.6% a.a. (Dry Hop – Aroma)
- Ferment for 4 more days at 68F, then condition & package.
