Homemade Mozzarella

I love making my own pizza and there’s no better topping than fresh mozzarella (and basil and fresh tomato sauce).  Here’s a quick 30 minute recipe.

Dissolve

  • 1 1/2 tsp citric acid; in
  • 1 1/4 cup water

Add to

  • 1 gallon milk

Heat to 90f

Stir

  • 1/4 rennet tablet; dissolved in
  • 1/4 cup water

into milk for 30 seconds

Let stand for 5 minutes (or more until curds are well formed)

Cut the curds into one-inch cubes

Gently stir and warm curds to 105f

Remove from heat and gently stir for 5 minutes

Ladle curds into microwavable bowl

Microwave for one minute, drain whey

Knead curds gently

Microwave another 30 seconds to 135f

Sprinkle 1 tsp salt over curds

Knead to shape into balls
